Many Japanese consider Ajisai (紫陽花, or hydrangea) to be the quintessential flower of this season, as they look just right when wet, and enshrouded in mist. And though these flowers can be found almost anywhere you turn your head in Tsukuba, thousands of Tsukubans make long trips (or should I say pilgrimages?) to famous ajisai temples, especially in Kamakura. Nearer to home there are 2 other nationally renowned hydrangea-viewing meccas, the Amabiki Kannon near Makabe, and the Taiho Hachiman Shrine in Shimotsuma. Both highly recommended at ANYTIME. All the more so in this season.

The flower has a long history in these islands and  many scholars actually assert that it is indigenous to Japan and in fact introduced to China from here. After centuries of breeding, numerous varieties have been developed and new colors, pinks and whites, brought out. By taking a look at the etymology of the Japanese name AJISAI, we can see that in earlier times the flowers were mainly blue, as the sounds used to make up the name originally meant a GATHERING OF BLUES (aji-from atsu (集まる) or gather , and ai (藍), indigo blue.

Hydrangea have another Japanese name, however, nanahenge (七変化), or seven transformations, which derives from the flower’s unique characteristic. The colors of the petals change according to the chemical make-up of the soil! This feature has given the flower rich symbolic meaning in Japanese art and poetry — especially to represent a fickle and changing heart. It is because of this characteristic too, that hydrangea were shunned by the warrior class in the feudal period, because for them, changing colors, or by extension loyalties, was anathema .

For Westerners, however, hydrangea can be seen as a symbol of silent devotion, as its scientific name, otaksa, appears to refer to Otaki-San, a woman from Nagasaki’s pleasure quarter, who was the  mistress of the German naturalist P.F. von Siebold, who went on to introduce ajisai to Europe .

One more point. These flowers are to be looked at and NOT EATEN. A couple of years ago, there was a nationally reported case of food poisoning which occurred down the road from my house in Tsukuba at the curious and pricey Italian restaurant Toeimon Sakae. The chef, in keeping with the season-conscious aesthetics of Japanese cooking(despite this being an Italian eatery), garnished a dish with the very IN SEASON leaves of hydrangea. These were subsequently consumed by the unsuspecting  diners.

This resulted in what must have been an unforgettable scene, right out of Monty Python. You see, the leaves of ajisai have always been used to induce vomiting, especially when poisons were consumed. Imagine then, the eight customers wretching uncontrollably, spewing out their expensive dinners onto the antique furniture and tatami mats (this restaurant is in a magnificent thatched roof farm house!).Surprisingly,the penalty for this chef`s oversight was a mere one-day suspension of business.

Has not it happened to you that you want to react, give a heartbreaking cry and never stop? The current society is immersed in a crisis, joining the economic to the values, perhaps the most important. Everything for which our ancestors had fought (equality, freedom and fraternity) has been strongly threatened in the midst of these states that only seek 'sheep', rather than citizens capable of thinking for themselves. In the midst of this climate, two possibilities arise: either resign yourself or give a radical turn to your life and make your closest beings give it.

R.A. speaks of this cry and of this necessary change. Raga in his novel: When the birds go into a coma. In it, the Valencian author makes his characters jump, qualifies them as misfits in a society that does not encourage their abilities but that sums it in a deep vital boredom. There resurface personalities such as Jacques, a young boy who apparently has everything but does not conform to statism and what he has done so far with his life. When the birds go into a coma, it represents a radical change in Raga's writing style, since it combines the mechanisms of the detective novel, expressed in the interrogations to which the friends and acquaintances of Jacques are subjected after his sudden death, with the fragments of the protagonist's diary, deeper and in which there are continuous reflections to the world of art and literature, and the monologues of the remaining friends who talk about themselves and their relationship with the rest. This combination is perfectly assembled, to the point that this novel is more addictive than the previous one, although the two make you think long and hard.

The fragments culled from Jacques' diary are really shocking in some cases, because the author manages to immerse himself completely in the mind of a person tired of the world, and who does not feel comfortable in him. Jacques is a scholar, and his journals do not escape his reflections on various topics such as the case of committed literature. Does the writer have a social function with his lyrics? Is the writer a person who has to promote change? Can books help us change the world?

These and other issues are the debate of this novel about the crisis, about how it is necessary to promote a change from the ideas that our elders have built over time, about how much we as human beings could do from our conventions.

The Carpa Koi fish is a large Asian ornamental fish. This race belongs to the subspecies of carp Cyprinus carpio carpio Linnaeus. Very popular and loved in China, Korea, Japan and Vietnam, this freshwater fish has been obtained from crosses between a selection of common carps (Cyprinus carpio) that originally lived in paddy fields.

The first signs of its existence are found in China around 500 BC. With the Chinese invasions to Japan this fish arrives in the Japanese country. The first breeding techniques were also found in China, and the first chromatic variations went from red to gray. The first interesting color variation is found at the beginning of the 19th century, with combinations of red, white and yellow.

The Koi Carp are omnivores with a herbivorous tendency. These are fish of a peaceful and sociable nature. Grouped in banks, they go back and forth between their resting places and their feeding areas.

The Koi prefer muddy or sandy bottoms in search of food thanks to their two large pairs of barbels. The higher the temperature of the water, the higher the hunger of the carp. When the temperature drops below 6 ° C, the carp practically stops feeding and goes into a semi-hibernation phase, which can last all winter. At that moment they hide in the bottom of the pond, almost buried in the mud, to protect themselves from the cold.

Koi Carp can only live in ponds, swimming pools or outdoor gardens. They are not able to survive in an aquarium, since each of the adult carps needs at least one cubic meter of water.

Food and diet

This species of fish is fed with any type of fish pond food. The amount absorbed depends on the temperature of the water, and they usually feed better if the food floats. During the winter months, when the water temperature drops below 6-8 degrees, it is not necessary to feed them.

Curiosities of the Carpa Koi fish

Essentially vegetarian, the Koi Carp are not predators despite their large size, something that a priori may surprise. In Southeast Asia, koi carps are considered a symbol of love and virility.

These fish can be found in different colors, being red, white, black and yellow the most common. Some varieties of colors are very appreciated by collectors and reach enormous prices, as long as the fish is not older than two years.

Before we talked about the longevity of the Koi Carp and we have even affirmed that they have lived up to 70 years. But there is a legend that says that a red carp named Hanako lived 226 years.

The Agar-Agar in recent times has been gaining more and more followers. 
Not only for all the possibilities it offers, but also for its Asian flavor and air, which turns it into an article with some mystery and, at the same time, a lot of medicinal benefits.

The important thing is to know well what Hagar Agar is, to know all its benefits and properties, the various uses that we can give it and where we can get them to add it to our life and that is part of it.

The Agar Agar is extracted from different seaweeds, including those of the genus Gracilaria. They are commonly classified as red algae. These algae are small, their stems are reddish and are characterized by their richness in mucilage, a type of fiber.
These are extracted by pouring a certain amount of hot water on them once after drying them in the sun. Traditionally this activity was carried out mainly in Japan. The mucilage or jelly they produce, once they have been harvested and dried, is sold as powder, flakes, filaments and bars in what is called Agar Agar.
Agar Agar, sometimes called "Kanten", is a gelling agent from a seaweed from Southeast Asia. It is used for scientific purposes (in biology, for example), as a filler for paper and as an agent in clarification in brewing.
And, of course, agar agar is an incredible culinary ingredient. It is a vegetarian substitute of gelatin, a thickener for soups and we can use it to preserve fruit, ice cream and other desserts.

The properties of Agar Agar can be divided into four fields: its solubility, its gelling capacity, its viscosity and its stability.
If we talk about the solubility of Agar Agar, it is insoluble in cold water although it swells considerably, absorbing up to twenty times its own weight of water. It dissolves easily in boiling water and forms in a firm gel at concentrations as low as 0.50%.

Agar Agar powder, on the other hand, is soluble in water and other solvents at temperatures between 95º and 100º C.
The pH that Agar Agar has, together with its sugar, is what allows it to have a great resistance as gelatin with a high concentration.

As its pH decreases, its resistance will also weaken. This gelling property that has the Agar Agar, gets it to solidify as gelatin before and at a lower temperature than with other gelatins.

The viscosity of Hagar Agar solutions vary widely and depend significantly on the source of raw material. This viscosity occurs above a constant pH point between 4.5 and 9. However, we have to be careful since, once gelation starts, the viscosity at constant temperature increases with time.

Finally, the stability of the Agar Agar is due to the fact that it is slightly negatively charged, which depends on two factors: hydration and electric charge. What we achieve with the temperature is to alter its stability and pH, which allows us to do with the Agar Agar what we need or want to do with it.

The Agar Agar is a product that has no calories: it has no carbohydrates, no sugar, no fat and it is loaded with fiber. We are faced with an article that is free of ingredients such as starch, soy, gluten, yeast, wheat, milk, eggs and preservatives.
Agar Agar absorbs the glucose that is in our stomach when it passes through our digestive system quickly, and gives our body the ability to inhibit the retention and storage of excess fat.

Its water absorption properties also help in the elimination of waste. The Agar Agar also absorbs bile and, in doing so, causes the body to dissolve more cholesterol.

It also becomes a perfect perfect substitute for traditional gelatin.
It is made from a source of plant rather than animal, so it makes it perfect for vegetarian and vegan diets, and other restrictions of other types of diets. The Agar Agar has no taste, smell or color, which makes it very convenient to use. It is fixed more firmly than ordinary gelatin, and remains firm even when the temperature is heated.
