Cauliflower with cheese sauce

This recipe I bring to you today is very similar, but instead of bechamel we will make a cheese sauce that is simpler to prepare. That way those who never make this type of dishes for fear of bechamel you get wrong you have another option to prepare them and not stay with the desire. It can also be an alternative to béchamel for celiacs.
This sauce could be used perfectly to cover a lasagna. Just keep in mind that the taste is stronger because of the amount of cheese it carries so we would throw a thinner and ready layer.
The recipe is great as an accompaniment. To put it next to a sad chicken fillet for example.
Ingredients
Cauliflower, 1
Milk, 200 - 300 ml depending on the size of the cauliflower
Grated cheese easy to melt, 200 - 250 g (I use cheddar)
Salt
To begin we preheat the oven to 180º C.
Then cut the cauliflower. The first time I had to cut a cauliflower I set the kitchen white-grain.
Once the cauliflower has been cut we put the pieces in a pot with water and salt and leave it cooking slowly for 5 or 6 min.
Meanwhile we are making the cheese sauce. For this we put the milk in a saucepan with the fire to the minimum and when it is very very hot (be careful that it does not start to boil because then the milk leaves), we go pouring the cheese little by little without stopping to remove with rods. We will notice that the cheese is falling apart and the sauce becomes thicker. It is important that it is very hot so that it melts well.
Then simply drain the cauliflower, mix it with the cheese and pour everything into a baking dish. We leave in the oven for a few minutes and as soon as it is a bit brown on top.
Result
It's great. The sauce thickens more when it is in the oven. I use it to accompany other dishes because I can prepare it in a moment.
