Ginger and Lime cake

.
Today I bring you a new cake, one of those that are quick and easy to prepare; This lime pie with a touch of ginger is very tasty and is the perfect ending to any lunch or dinner for this summer. In case ginger scares you, I will tell you that with the amount it takes practically not noticed, but you can reduce it or even eliminate it completely, in that case add the species that you like the most.


Ingredients:
1 disc of mass breeze
4 eggs
100 g of glass sugar
60 g of white sugar
400 mL of cream to assemble
2 limes
1 tablespoon ground ginger
Apricot jam


Preparation:
The mass of the breeze is spread in a removable mold and pressed on it so that it is firmly adhered to the walls of the mold.
A piece of vegetable paper and some legumes are added to make weight.
The dough is baked in the oven previously heated at 180 ° C for 15 minutes.
When removing it, remove the vegetables and let it rest.
In a bowl beat 2 of the eggs together with the other 2 yolks.
Next, add the icing sugar, the skin grated and the juice of the limes, the whipped cream and the ground ginger to the eggs. Beat everything until you get a homogeneous mixture.
Next, pour the mixture over the base for the previously cooked cake, and put everything back in the oven until the lime and ginger cream is completely curdled.
It may take between 30 and 45 minutes. Once curdled, turn off the oven and let it cool with the cake inside.
To finish the cake, unmold it and place it on the plate where you want to present it. Then fill the inside with apricot jam.
If desired, a few slices of lime are added as a decoration.
The cake is kept in the refrigerator until it is time to serve it.
