VENETIAN BREAD CAKE (TORTA MOIA)
Ingredients:
600 gr of stale bread (non-oil common bread)
5 dl of milk
100 grams of raisins passes
50 grams of candied fruit
3 medium apples
100 grams of butter
1 lemon
200 grams of 00 flour
150 grams of sugar
4 eggs
2 tablespoons of grappa
Preparation :
Chop the bread and let it soak in a bowl with the milk for at least 2 hours.
Soak the raisins with warm water. Peel the apples and cut them into small pieces.
Squeeze the bread well to remove excess milk and pass it through a vegetable mill, so as to avoid large pieces. Place the cream of bread in a bowl, add the sugar and mix well
Add the eggs one at a time, stirring vigorously to prevent lumps from forming. Also add the grappa, the grated lemon peel, the candied fruit, the apple into small pieces and the previously squeezed raisins.
Mix with a wooden spoon to mix all the ingredients. Finally add the sifted flour as well.
Grease a rectangular pan abundantly, pour the mixture and try to level it as much as possible.
Bake in a hot oven at 220 ° for 45-50 minutes.
Turn out the cake and serve when it has cooled.
Advice: this is a recycle cake par excellence, so you can also add dried fruit, pine nuts and dried figs to the dough, depending on your imagination and what's left in the pantry!
