Rice with chickpeas. Dinner is served.

Recipe of rice with chickpeas, a dish specially adapted for vegetarians and vegans, low in salt, made with garlic, potatoes, tomatoes and peppers.

Ingredients:
350 gr of rice
150 gr of chickpeas
2 potatoes
3 tomatoes
1 head of garlic
sweet paprika
Water
Salt
Olive oil
Parsley

Preparation:

Put the chickpeas to soak the day before. Cook them in water, salt and parsley. Drain and store the cooking water. In a flat casserole sauté the head of whole garlic with a little oil. Take a tomato, peel it with a knife, chop it and pour it into the pan. Peel the potatoes and cut into 1 cm thick slices. Put them in the pan. Add the rice, paprika and chickpeas. Finally, cover everything with the chickpea broth. Part 2 tomatoes into four pieces and put them on top of the above. Put the casserole in the oven at 180ºC for 20 minutes. Finally, garnish with parsley.

I must indicate that this recipe is fully indicated for people suffering from hypertension.
