Mosaic Cake is a cake with a special dough with cocoa, rahat and candied fruit very popular with us. "rahat" in Romanian, "in English I do not know how to say. I attached the picture with "rahat" to see what it is.

120 g flour
120 g of sugar
100 g candied apricots
120 g fried nut
200 g of rahat
7 pcs of whites
1 baking powder baking powder
1 salt of salt

1 teaspoon of vanilla extract

1. Beat the whites with a salt of salt. Add the sugar gradually until we finish it and mix until we get a strong and glossy mash. Leave the mash up and mix the flour with the baking powder.
2. Add the rahat, fried nuts and candied apricots over the mixture of dried ingredients and mix. Candied candies can be replaced with any other candied fruit.
3. Add a tablespoon of the dry nut mixture over the meringue and mix it gently with the top spatula down. The composition for the countertop is ready and now we need a 20/30 cm thick fat table and taped with baking paper. Put the composition in the tray and put the tray in the prewashed oven at 170 C for 25 minutes. After we remove the tray from the oven let the counter cool.

4. Mix the yolks with sugar until the yolks become pale and creamy. Put the bowl over a crack with water that is medium, water should boil when we place the bowl on top. We leave them about 5 minutes while mixing continuously. We take the composition and leave it to cool.
5. Mix the butter for 2 minutes then add one tablespoon of the egg composition until we finish it, this composition should be cold when we add it. Add a teaspoon of vanilla extract after which the cream is ready.

6.We need a plate that we put a wafer sheet but not before a little grease with the cream for stability. We put half of the cream and spread it lightly over the entire surface of the wafer sheet, then put the counter.
7. Put the remaining cream and spread it over the whole surface of the table and then cover with the wafers. I melted a little chocolate to decorate the cake, this is optional. I cook the cake in the refrigerator for 2 hours after which it can be cut and served. Good appetite.
