Russian salad or Olivier salad (Salat Olive) is a type of salad prepared with mayonnaise, cooked potatoes, carrots, pickles, ham, cooked eggs, and sometimes with different types of sausage or boiled chicken.
This salad is known in many European countries, although not always under the same name. In some countries (eg Croatia, Italy, France, Spain, Macedonia, Bulgaria, etc.) is known as "Russian salad", while in some other countries (eg Russia, Ukraine, Germany, USA, UK, etc.) known as "Olivier's Salad" or "French Salad" (the name may also refer to other types of salad).
Russian salad was first prepared by Lucien Olivier, a Russian chef of Belgian origin at the Hermitage restaurant in Moscow in 1860. "Hermitage" was one of the best Russian restaurants of that time.
In the years of famine that followed the October Revolution and the Russian Civil War, most of the basic ingredients were replaced by more accessible and more practical ingredients. Today's Russian salad has very little in common with the original recipe, whose original still remains a secret.
