Garlic Mushroom Quinoa

Ingredients:

1/2 cup quinoa
1 cup vegetable broth
1/2 tablespoon refined oil
1/2 teaspoon black pepper
1/4 cup cilantro
1 1/2 cloves garlic
6 mushroom
black pepper as required
salt as required

Method:

1. Heat oil in a pan over medium flame and add garlic to it.
2. Saute until it turns golden brown in colour.
3. Add the sliced mushrooms to the pan and cook on medium flame for about 5-6 minutes, till the mushroom is dry enough.
4. Next, add quinoa to the mushrooms and stir for 2 minutes.
5. Add vegetable broth and bring the ingredients to a boil.
6. You can even add chicken broth instead of vegetable broth as per your taste.
7. Season the quinoa with chopped cilantro, salt and black pepper powder and simmer it on low heat for 20 minutes.
8. Your Garlic Mushroom Quinoa is ready.
9. Transfer it to a serving bowl and enjoy.
