Chicken Pie

.
I simply love this recipe of chicken pie.
I use puff pastry for chicken pie though some people use shorcrust pastry for this but i am not a big fan of shortcrust.
ingredients
puff pastry (i used 12 puff pastry squares you can use more or less according to ur baking dish size)
for filling:
4 to 5 pieces of fresh whole chicken,boiled n then roughly cut in to bite size pieces. discard the bones after boiling (you can also use boneless chicken breast)
fresh mushrooms 7 to 8 sliced
corns 1 1/2 tablespoon
spring onions chopped 2 tablespoon
corriander or parsley leaves 1 tablespoon chopped
butter 1 to 2 tablespoon
1 medium onion chopped
2 cloves garlic crushed
salt to taste
flour 1 to 2 tablespoon
milk 3/4 cup or may be more or less....depends on ur sauce consistency
cream 2 to 3 tbsp
salt to taste
1 egg mixed with lil water for egg wash glaze

Heat butter in a pan, add onions n garlic. fry until onions become translucent. add mushrooms,chicken,corns. stir fry on medium to high heat until mushrooms becomes little soft and changes it's colour, about 3 to 4 minute. then add springs onions ,fry 1 more minute. add flour and mix well. now add milk and cream and stir continously until you get nice creamy saucy filling. if you find your sauce too thick you can add little more milk or if you find it too thin then you can always add little more flour to make it according to your desired consistency. add parsley and salt to taste. mix well and cook for 1 minute. then remove from the stove and let it cool slightly.
preheat your oven to 180 degree.very lightly grease your baking pan.arrange puff pastry squares on it...i used 6 squares for the bottom layer and 6 for the top layer. means total 12 squares i used. spread chicken filling on it then cover the top with more puff pastry squares. slightly seal the edges by pressing with a fork. then apply egg wash on it. bake for abt 30 to 35 minutes. don't take it out once you see the top goldn brown because the bottom layer of puff pastry takes a little longer to cook. so if you find your top layer start getting extra brown. cover it loosely with a foil and continue baking. try using any glass baking dish so that you can easily see the bottom layer while baking if it's cooked or not. once done, take out from the oven n let it cool slightly for about 5 minutes. then dig in your forks and enjoy.
