Slimming world- DINNER - America grilled spice-rubbed salmon

INGREDIANTS
*1 tbsp coriander seeds
*1 tbsp mustard seeds
*1 tbsp cumin seeds
*1 tbsp black peppercorns
*1 level tbsp brown sugar
*4 x 65g salmon fillets
*1 tbsp chopped fresh coriander
*Lemon or lime wedges, to serve
METHOD
1.Heat a heavy frying pan and add the coriander, mustard and cumin seeds.
2.Cook them over a medium heat, tossing occasionally, for about 2-3 minutes, until the seeds release their aroma.
3.Remove the seeds from the pan, cool a little and then grind in a pestle and mortar or a spice ginder.
4.Mix with the brown sugar and black peppercorns.
5.Place the salmon, skin side down, in a shallow dish. Cover the pink flesh with the ground spice mixture, pressing it into the surface.
6.Cover with cling film and chill in the refrigerator overnight.
7.Grill the salmon on a preheated hot barbecue or grill for 4-5 minutes each side, until the skin is crisp and the flesh is cooked and opaque.
8.Sprinkle with fresh coriander and serve garnished with lemon or lime wedges.
