Mimosa Salad for lunch
This delicious Mimosa Salad includes potatoes, tuna( or other meat), mayo and eggs.
Everything is grated finely, making the texture delicate and plesent that it's hard not to overeat.
I like to pre-cook potatoes and eggs.
Let cool to room temp. Cold veggies grate best. Peel and cut eggs in half separate whites from yolks. Drizzle a light layer of mayo over the tuna.
Top drizzle with grated egg yolk.
