Homemade KFC

I think it's a safe bet that we all know what Kentucky Fried Chicken is. The KFC franchise has been around for a while and are probably best known for, well, their chicken. Speaking of which; have you ever made the KFC chicken at home? There are recipes all over the internet for making the best KFC chicken in the comfort of your own home; I thought I'd share the one that my sister taught me.

Note: this is for 5 pieces of chicken.

What you'll need:

3 eggs per 5 chicken pieces

Flour

Spice Mix of your choice (We use one called Southern Coating Original)

Preparation Method:

First off, fill a frying pan about halfway with oil and bring it to a boil (put a lid on the pan and turn the stove plate as high as possible).

While the oil is heating up, put a few tablespoons of flour into a small side plate - do the same with the spice mix.

Break and beat three eggs in a glass dish - at this point the oil should be hot enough

You're going to take each piece of chicken and put it through the egg, flour and spice and then throw it in the pan.

Fry up each piece on all sides and you're going to repeat the coating and frying bit a few times - I personally prefer to do the coating 2 - 3 times while I'm making this stuff.

Generally-speaking you fry each side for about five to ten minutes and it cooks the chicken all the way through without a hitch. Additional coatings of egg, flour and spice add an extra layer of crunchiness without making the meat itself all tough. Although, you'll have to try a few times to find the way that you like the chicken.

A side order of mashed potatoes and roast chicken gravy goes very, very well with this and coating the chicken pieces in the gravy just raises the yum-factor.
