Cook Chicken and Potato Curry

2 hour cooking time, serves 4. Contains roughly 400 calories

2.5 tablespoon Veg oil
2 large brown onions,finely sliced
1 tablespoon ginger paste
1 garlic paste
1 teaspoon salt (can vary depending on your salt intake)
1 teaspoon curry powder

1 teaspoon garam masala
1 teaspoon ground turmeric
1 teaspoon ground cumin
4 skinless, boneless chicken breast diced in to little cubes
3 large Brown potatoes cut in to cubes (same size of chicken)
3 cup of tap water
1 cup of Coriander

Heat the oil in a large Sauce Pan over medium-high heat. Cook and stir the onions in the hot oil until softened, for 5mins. Add the ginger-garlic paste and continue cooking another 5mins. Reduce heat to medium. add curry powder, garam masala, turmeric, and cumin; cook and stir another 5mins.

Add the chicken and potatoes to the mixture in the sauce pan; simmer, stirring occasionally, until the potatoes are tender and the chicken is no longer pink in the center add water, tehn leave to simmer for around 20 mins. Sprinkle the coriander over the mixture and continue simmering another 10 minutes. Serve hot with boiled plain rice or nan.
