Shrimp tortillitas, recipe from Cádiz

For about 12 shrimp tortillas
100g of shrimp
100g of wheat flour
50g of chickpea flour
1 glass and a half with water
1/2 teaspoon salt
1 chive
Fresh parsley
Extra virgin olive oil
How to make the dough of the shrimp tortillitas
In a bowl mix the flours with the onion and two tablespoons of the chopped parsley.
Add salt, shrimp and water, mix well until you get a mass rather liquid but without any lumps.
Fry the shrimp omelettes
We take a large pan to pour olive oil, more or less a finger high. We put to heat the pan; Once the oil is very hot, add two or three tablespoons of dough to the pan (those that enter us without the tortillitas touch) let cook on one side and when it begins to brown, we turn the other side to be brown also.
As the shrimp omelettes are cooked, we leave them on absorbent paper so that most of the fat will stay on the paper.
We just have to eat them, we have to make them fresh and hot!
