Homemade High Protein Cereal Bar Recipe

I love baking and experimenting in the kitchen, but when it comes to recipes, I often end up either making something which although is a nice treat, isn't actually that macro friendly, or I have to chop up a recipe so much in order to make it a nice balance between healthy and treat worthy, that it becomes an ordeal.

So, I decided I wanted a healthy but really tasty treat, which was balanced and friendly on the macros, but not only that, it also needed to be simple, quick and easy to make.

So I devised this recipe with ingredients which are easy to get hold of, and ones I already had at home, and made it no bake to really make it simple. There are two great reasons to make no bake protein cereal bars... one is that by not cooking the protein it keeps the protein intact and good quality, and two, it means this recipe can be made in just 15 minutes!

So, if you're after a healthy, tasty, high protein snack, then look no further! Here is my step by step recipe:

Ingredients:
- 50 grams (one scoop) protein powder (any flavour. The protein flavour really comes through so if you choose chocolate for example, your bars will taste like chocolate cereal bars)
- 100 grams oats
- 50 grams granola
- 50 grams sultanas
- 50 grams linseeds
- 20 grams cocao nibs
- 20 grams chia seeds
- 100 grams Vitafiber -(available from Muscle Food)

Recipe makes 12 cereal bars.

Step one: Gather all of your ingredients, grab a mixing bowl and some scales. Weigh out all of the dry ingredients and mix together in a bowl.

Step two: Weigh out 100 grams of Vitafiber and add to the mixture. Stir the mixture to bind together.

The consistency should now be firm and all mixture coated in the liquid.


Step three: Pour the mixture into a silicone baking mould and flatten. I always use silicone as the mixture never sticks to the mould, however if you don't have a silicone mould, then baking paper in a tin works well. Work from the middle out to the sides when flattening the mixture. I used a spatula for this as the mixture is extremely sticky and I found this worked the best.

Step four: Carefully score out the twelve pieces to make it easier to cut once the mixture is set. Do this by pressing roughly halfway into the mixture with a sharp knife to make the lines visible.

Step five: Sit the mixture in the freezer for two hours to set, before then storing it in the fridge. Once the mixture comes out of the freezer and into the fridge, allow at least one hour in the fridge before making the final cuts to separate the bars. Once the mixture has been in the freezer for two hours and then the fridge for one hour, its ready to slice, remove from the mould, and enjoy!

It's as easy as that!

Calories - 130
Carbohydrates - 19 grams
Fat - 4.3 grams
Protein - 6.5 grams
