Ajvar is one of the biggest obsessions of the Macedonian household. To make a good ajvar, which causes the deceit, and above all the ajvar on which the neighbors envy, is a real challenge. But not only that, making ajvar is a real pleasure. The day when ajvar is made in a house is a holiday. Simply there is no process that can easily unite all members of today's modern family. The typical picture of this process looks like this: the father bakes peppers, the mother recruits the children to peel, and the grandmother tells us how in their time the ajvar was tired. During this time the neighbors gather, they begin to bring brandy and salads, and tell the neighborhood mats. Old and young, male and female, healthy and painful, all are solidified in the baking, peeling and grinding of the piper. Of course, the greatest satisfaction is the feeling that comes with the taste of the finished ajvar.
Otherwise, the ajvar has a long tradition in these areas. There are beliefs that ajvar is one of the oldest Balkan specialties and according to the legend, he was a regular snack of great minds like Plato and Aristotle. More than a decade ago, members of a foreign mission, amazed by the phenomenon that dominated this phenomenon, made a detailed examination of the nutrition and usefulness of the ajvar. Although the results were at least negative, it failed to take away the epithet "most resigning" from the ajvar and he was still consumed en masse in every household.
