Blueberry and White Chocolate Muffins Recipe
Another of my favorite dessert recipes! Enjoy! This makes 20 medium sized Blueberry and White Chocolate Muffins!
You will need:
1/2 Cup of Butter - Any kind
2 Large Eggs - Free range!
2 Cups Flour
2 Teaspoons of Baking Powder
1/2 Teaspoon of Salt
1 Cups of Sugar
1 Cup Milk - Full Fat
1 Teaspoon Vanilla Extract
2 Cups Blueberries - Unfrozen
1 Cup White Chocolate Chips - The kind used for baking.
Instructions:
1. Prepare 20 medium sized muffin cups in a tray, grease them carefully with butter.
2. Slightly warm the rest of the butter, then add the sugar and whisk until creamy.
3. Mix in both the eggs and whisk thoroughly after each one.
4. Add the vanilla extract, baking soda, and salt, and repeat.
5. Add flour and milk but stir gently this time.
6. Carefully pour in the blueberries and white chocolate chips.
7. Put a little mixture into each muffin cup, filling them to around 3/4 full.
8. Bake for 15 minutes, then poke gently with a fork to see if they are done. If they are still soft or not fully golden brown, bake for another 20 minutes.
9. Leave to cool for at least 1-2 minutes before eating.
Bonus
If you are feeling adventurous, cut your muffins in half horizontally and add some cream filling! You can use cherries instead of blueberries if you prefer!
