Cheesy Chicken Pockets

"What do you want to to eat darling?" I asked my children and as i expected their reply was "nothing mum"
I clearly have no idea how to make my children eat something well, my little one helped me to create something special by coming out of the room and saying "mum, i want chicken, cheese, vegetables and ummm" he thought for a minute and said "oh yes and bread" and here i come with my new creation CHEESY CHICKEN POCKETS
simply WOW! and perfect for little fussy eaters.
Ok so for filling you need the following items:
Shredded chicken 1 cup
Shredded cabbage 1/2 cup
Grated carrot 1/2 cup
Finely chopped capsicum 1/4cup
Finely chopped spring onions 1/4 cup
Boiled peas 1/2 cup
Mayonnaise 2-3 tbsp
Grated cheddar and mozzarella cheese 1 cup
Salt and pepper to taste
Mix all the ingredients together and set aside.
For pockets you will need 10-16 bread slices, depending on how much filling you use in one pocket.
Take 2 bread slices. Trim the sides and flat them with rolling pin. Spread the chicken filling on one slice, brush the corners of slices with egg wash....cover with the second slice and seal the corners by pressing gently with your fingers.
Prepare all the pockets like this now dip this sandwich in beaten egg, roll in breadcrumbs and then deep fry. Cut the pockets from the center and serve!
