Chocolate walnut Biscuit

Ingredients & Method

DOUGH

4 egg whites
125 g. sugar
120 g. ground walnuts
1 tablespoon flour
pinch of salt

Cream:
4 egg yolks
125 g. sugar
2 tablespoons milk
25 g. cocoa
Vanilla extract or rum
Glaze/Frosting:
100g. chocolate
3 tbs oil
chopped walnuts
Method:
Whisk egg whites with a pinch of salt, add the sugar.
Continue whipping untill smooth, then mix in the walnuts and flour.
Pour the mixture in a large baking oven pan and bake at 170 degrees for about 20-25 minutes.
Once baked, put aside in a cold place.
To prepare, cut across the width in three equal parts.
Whisk egg yolks with sugar and add milk. Steam for about 10 to 15 minutes.
Add cocoa and milk halfway through steaming.
Put aside.
Whisk butter/margarine until foamy.
Add the cold cream and whisk together.
Coat two of the doughs with the cream and put the third one.
Melt the chocolate with the oil, pour it onto the biscuit and add in the chopped walnuts.
