Fegatini

Every Christmas my family meet up and prepares those little things.
Boiled eggs with mayonnaise and olives.
Salmon. And the special ones.
Here in italy, especially in Tuscany we eat a lot of Fegatini. They are extremely good if made in a correct way.

Here's the recipe!
You'll need: 8 chicken livers, 4 anchovies, some capers, salt, pepper, onion, carrots and some good white wine.

Take and grind the chopped onion and some carrots on some olive oil, then add the chicken liver.
Moistened with the wine and, when the sauce is dry, remove them from the fire and chop them with capers and anchovies. You can use mixer to have a sort of patè texture.
Stir for a few minutes with butter, spread it over the slices of shredded bread and you're done!

You can serve them warm or cold. I personally prefere it hot :)
