Magic Cake
Hot whole milk 500 ml
Sugar 150 g
Cold melted butter 125 g
Flour 00 115 g
Eggs at room temperature 4
Cold water 1 tbsp
Vanilla extract 1 tbsp
Lemon juice 1 tsp
Salt up to 1 pinch
Icing sugar q.b.
Butter q.b.
start by melting the butter in a saucepan,
pour it into a bowl and let it cool to room temperature.
Then divide the egg whites from the yolks and pour the egg yolks at room temperature into a bowl, into which you will add the sugar
whip the egg yolks with the sugar for at least 10 minutes, until the mixture becomes clear and fluffy. Still beating, add to the yolks with the sugar also a spoon of very cold water and a spoon of vanilla.
 Add a pinch of salt and the melted butter that you have cooled, then keep beating for a few minutes. Sift the flour at a time into the mixture and mix it to absorb it completely; Meanwhile, heat the milk in a saucepan.
Once it is hot, pour it into the mixture and let it incorporate for about 1 minute.
At this point, take the egg whites at room temperature and pour them into a clean bowl, start mounting them and start whipping together the lemon juice. When the egg whites become clear: it will give stability to the mixture. You will have to climb in not too firm snow.
Then pour the mixture into the buttered and lined pan and bake in a preheated static oven at 150 ° for about 80 minutes, until the surface of the magic cake is golden brown; remove the cake from the oven and let it cool completely to room temperature, then cover it with a film and leave it to compact in the fridge for at least 2 hours.

Orange ricotta tart
350 gr of 00 flour

800 grams of ricotta
100 grams of sugar
100 grams of mixed candied lemon and orange juice

300 grams of orange marmalade
First prepare the pastry: mix the flour with the sugar and add the cold diced butter. Knead lightly with your fingertips, then add the lightly beaten eggs, the tablespoon of cold water and mix to form a smooth and homogeneous mixture. Form a ball, wrap it in plastic wrap and let it rest in the fridge for at least 30 minutes.
Take the pastry again, roll it 2/3 to a thickness of 1/2 cm and line a 22 cm buttered mold. Put back in the fridge and let it rest for another 30 minutes.
Meanwhile, prepare the filling by mixing the ricotta, sugar, orange juice, candied fruit and eggs. Mix well.
Take the mold and prick the bottom of pastry. Pour the jam over it, distributing it evenly. At this point, add the ricotta filling leveling. Finish with the strips of shortcrust pastry made from the leftover dough, sealing them well at the edge of the tart.
Cook the orange ricotta tart in a static oven at 180 ° C for 55 minutes - 1 hour.

Paradiso Cake

Preparation :
Soften the butter, sift the powders: flour, starch and baking powder.
When the butter is creamy, add the sugar to the bowl and whip the mixture.
Flavored with vanilla extract, grated rind of a lemon and a pinch of salt. It is the turn of the eggs, be careful to add one at a time and wait for it to be absorbed by the mixture before adding the next one. Once all the eggs have been added, let the dough mount for at least 5 minutes. At this point, add the previously sieved powders and mix with a spatula from the bottom upwards so as not to disassemble the mixture.
Now take a hinged mold 18 cm in diameter, line the bottom with greaseproof paper and butter and flour the entire inner surface of the mold. Transfer the mixture by leveling the surface. Put everything at 180 ° C in a static oven for about 40 minutes. Cover the cake with a sheet of tin foil if it tends to become too colored.
After cooking it, take it out of the mold and serve it, dusting it to taste with icing sugar.

Orange cake

Carrot and Almond Cake

3 carrots
70 g of cane sugar

240-270 ml of soy milk (for those who like it, if not use normal milk)
How to prepare
Sift the flours with baking powder; coarsely chopped almonds and washed carrots.
